Wolfburn’s second expression – the sherry cask-matured Aurora – starts its life in the traditional way. The worts are fermented for roughly 75 hours then the spirit is double distilled, slowly, first through the wash still and then through the spirit still. Following distillation, the whisky is matured in two different types of casks; 80% in first-fill ex-bourbon barrels and the final 20% in first-fill Oloroso sherry hogsheads.

Nose : Sherry sweetness is followed by aromas of freshly cut grass and autumn fruits, with just a hint of coffee and dark chocolate.
Palate : Floral tones come to the fore, with overtones of spice and vanilla. Fruity sweetness coats the palate, with fruit and nut flavours leading to a warm, soft finish.
