The crucial difference, however, is that the ex-sherry wood in this case is made from American Oak (mostly Fino sherries). This adds yet another layer of complexity, depth and character to this truly superb malt whisky. Old Pulteney 21 Year Old has been voted 2012 World Whisky of the Year by the prestigious "Jim Murray's Whisky Bible." Scoring a record equalling '97.5' points out of 100, it is only the third time that a single malt has ever won the prestigious award. "The colour is golden amber and the nose is packed with lovely aromas - something nutty (think of almonds), vanilla, oatcakes, crisp red apples, dried fruits and caramel (the combination of the last two is reminiscent of toffee apples). Other aromas are less prominent and appear with increased time in the glass, especially hints of ripe banana and malty cereals. On the palate, this is drier than expected and is packed with oak, cinnamon and nutmeg notes initially. It feels buttery and creamy in the mouth with pleasant toffee-like sweetness complimenting the wood spices of earlier. The dried fruitiness from the nose is also present, with notes of sultana particularly evident, along with further elements of almonds, vanilla, burnt sugar and a hint of saltiness that cuts through the richness to give balance. This barrel was constructed at an undisclosed location in Europe with the help of a few experts. Whisky is traditionally aged in a barrel made of one type of wood, which lends the flavor and complexities to the malt, however, Amrut Spectrum in matured in a barrel with five different types of wood. Although a no-age statement release, it is bottled from a few carefully chosen aged sherry casks at the peak of their development. A very rare find and all bottles are individually numbered.

Initially it was the beers that benefited from a maturation in whisky barrels, now it is the whisky being finished in selected beer barrels.
Matured in a bourbon barrel before finished in an IPA barrel.

This uniquely Irish whiskey was triple-distilled, blended from a mash of malted and unmalted barley then matured primarily in refill American Oak bourbon barrels, and for the first time ever, finished in virgin native Irish Oak Hogshead casks, harvested from 130 year old oak trees from Grinsell’s Wood, within the Ballaghtobin Estate in Co. Kilkenny. Midleton Dair Ghaelach (which means “Irish oak” in Gaelic) is crafted in the classic Single Pot Still Irish Whiskey style, a mash of malted and unmalted barley has been triple distilled in traditional copper pot stills and matured for between 15 and 22 years in American refill casks. Uniquely, the whiskeys were then married together for two days and filled into Irish oak casks for almost a year. According to Billy Leighton, Midleton Distillery’s Master Blender, “The process of maturing in native Irish oak has enabled us to showcase our Single Pot Still Irish Whiskey style in a new and innovative way, the casks impart much more generous toasted wood, vanilla and caramel flavors than what we expect from American bourbon"

Bottled in 2013 by Signatory Vintage for their Cask Strength range. 616 bottles produced, natural colour. This whisky could be described as double-peated, as peated malt was used in production, but also some of the water used was peated water made in Stornaway and run through the still to concentrate its peatiness. Craigduff is not a distillery. The whisky was an experimental peated single malt produced for Chivas Brothers in the 1970s, but not distillery released as a single malt.
It is believed to have been distilled at the Strathisla distillery. “Craigduff was made at the Strathisla Distillery and was made with heavily peated malt” (Hugh Thompson, retired distillery manager at Glen Keith & Strathisla) however Signatory have muddied the waters by declaring that it was distilled at the Glen Keith distillery nearby, this has since been denied by Chivas.
