Cotswolds Sherry Cask expression begins with their new make spirit which is already incredibly smooth and fruity thanks to the pair of yeasts used, the long 90-hour fermentation and the tight heart cut on the spirit still. This spirit is diluted to 57.4% abv before filling a combination of casks seasoned with Oloroso and Pedro Ximénez for full term maturation. This is the only whisky in their Cask Expressions Range which has been blended across cask types, though all of them are sherry casks.
