The Fino Sherry Matured limited edition is a vatting of 12 Fino Sherry Butts. The whisky has spent it’s full maturation in fino casks previously used by Bodega Miguel Martin in Spain. During its time in cask, the whisky has taken on the fresh green apple character of fino butts, balancing beautifully with the citrus sweetness, cooked fruits and maritime peat smoke of Kilchoman.
The peating level is 50 PPM, 2020 Edition.
Nose: fresh and floral with plenty of coastal influence. Seaside freshness gives way to tropical fruit, light citrus and malty sweetness.
Palate: juicy tropical fruit and heavy earthy peat smoke combine with chilli heat, lemon zest and a creamy, malty sweetness.
Finish: long and bold with heavy peat smoke, cashews and almonds with the dry saline influence of the fino coming forward
