Tomatin Cu Bocan 2005, Single Malt Scotch Whisky

700 ml, 50.0% abv, Scotland (Highland)

During the last week of every year, lightly peated barley is used in the production of the Cù Bòcan signature Scotch whisky. This spirit, just 90,000 litres per annum, is then filled into 1st fill ex-Bourbon, ex-Sherry and Virgin Oak casks and, when matured, produces an intriguingly unconventional, lightly peat, Highland single malt.

This edition was matured in a combination of Sherry and Bourbon casks. Rounded and full with emerging sweet, peaty smoke and spiced earthy fruit flavours.

Vintage edition, matured for over 11 years. Only 11,400 bottles produced. 50% alc/vol. Natural colour and non chill filtered. Jim Murray Whisky Bible 2018 – 91.

Description

AROMA
Butterscotch, toffee apples and honey are met with a hint of vanilla that binds these big sweet flavours together. The faint smoke of heather burning lingers in the background throughout. In time, chilli infused chocolate, lemon syrup and a very slight hint of smoked bacon emerge.

PALATE
A burst of candy floss and birch sap sweetness is complimented by a gentle touch of peat smoke which brings a rounded earthy note to the taste. Dark chocolate, winter spice and poached fruits leave a warming suggestion of Christmas pudding.

FINISH
Rounded and full. The combination of sweet and smoke is left to evolve on the palate with soft fruits continuing to play a role.
